I marvel how all kinds of foods are available in our supermarkets. Yes, you may need to go down that aisle you rarely go down, but do it, and you can make Asian Noodles with Shrimp and Bok Choy from my new book One-Pot Wonders. There’s a lot of ingredients but it’s just one thing after another. The key thing are the kind of noodles you use and in this dish they should be thin bean thread noodles. It might not even say that in bold print on the package. You may have to read the fine print. But it must be bean thread or rice noodles as wheat-based spaghetti won’t work. Oh, and by the way, it gets cooked in a flameproof casserole or a soup pot. You need the noodles, cilantro, ginger, garlic, oil, chicken broth (which can come from a can or granules), bok choy, shrimp, and then from that international food aisle some fish sauce, oyster sauce, and rice wine. Now you’re cooking!
