Grill Fruit for Dessert

Grilled Bananas with Peach Schnapps and Cinnamon (CAWCOM) (3) I’m the kind of cook who utilizes not only every morsel of food in inventive recombinations, but who just hates to use a load of charcoal to fire up a barbecue grill for 30 minutes only to cook an 8 minute steak.  So I often prepare other foods for grilled tidbits, for appetizers, and even for dessert.  Yes, you read right: dessert, namely fruit.  One of the most ideal fruit to grill are bananas because their peel protects them from the searing heat of the fire.  Grilling bananas is a unique and fun way to prepare them. Prepare this dish when you can take advantage of a still very hot grill from a barbecue dinner, but remember to scrape the grilling grate with a grill spatula and let some of the bits burn off from any previous food that was cook before cooking the banana.

Grilled Bananas with Peach Schnapps and Cinnamon

Yield: Makes 4 servings
Preparation Time: 20 minutes

4 bananas, with their peel

4 tablespoons peach schnapps

Confectioner’s sugar for sprinkling

Ground cinnamon for sprinkling

1. Prepare a hot charcoal fire or preheat a gas grill on high for 15 minutes.

2. Put the un-peeled bananas on the grill 1 to 2 inches from the source of the heat until they blacken on both sides.

3. Remove from the grill, slice the bananas open lengthwise, leaving them in their peels, and sprinkle a tablespoon of peach schnapps, a shake of powdered sugar and cinnamon on each and serve.
